Fig, Goat Cheese and Bacon Quiche
This quiche combines smoky bacon, tangy goat cheese, and fresh figs in a simple egg custard and flaky crust. It’s an easy, flavorful option for brunch or a make-ahead breakfast, with a touch of sweetness from a drizzle of honey. The figs and warm flavors make it especially fitting for early fall mornings.

Ingredients
- 1 9-inch pie crust
- 5 Vital Farms Eggs
- 1/2 cup whole milk
- 1/2 cup heavy whipping cream
- salt and pepper, to taste
- 1/4 teaspoon ground nutmeg
- 2 tablespoons fresh chives, chopped
- 5 fresh figs, sliced into thirds
- 5 slices bacon, cooked and crumbled
- 2 1/2 ounces goat cheese, crumbled
- honey or hot honey, to drizzle
Instructions
- Preheat the oven to 375 °F.
- Par-bake the pie crust by baking it without any filling for 12-14 minutes. Remove from the oven and let cool.
- Prepare the filling by adding eggs, milk, heaving whipping cream, salt, pepper, nutmeg, and chives to a bowl. Mix until ingredients are well combined.
- Assemble the quiche by adding the cooked bacon evenly to the bottom of the crust, followed by half of the goat cheese, and most of the sliced figs.
- Pour the egg mixture over the filling and into the pie crust. Top with the remaining goat cheese and fig slices.
- Bake for 45-50 minutes. Top with foil if the crust begins to darken too quickly.
- Let the quiche rest for 10-15 minutes. Drizzle with honey or hot honey before serving.
