Lemon Meringue Shandy
This Lemon Meringue Shandy is the ultimate summer refresher. With its blend of sweet and tangy citrus, topped off with a fizzy finish, it's perfect for a warm summer day.

Ingredients
Lemon Merginue
- 1 Vital Farms Egg White, at room temperature
- 1 tablespoon fresh lemon juice
- 1 tablespoon granulated sugar
- 1/4 teaspoon cream of tartar
Shandy
- 1/4 ounce limoncello
- 3 ounces lemonade
- 5 ounces light beer
- lemon wheel, for garnish
Instructions
- To make the lemon meringue, add all ingredients to a mixing bowl. Use a handheld mixer to whip until soft peaks form. (Optional: Place in a piping bag and set aside.)
- To make the shandy add limoncello, lemonade, and beer to a chilled glass. Gently stir. Pipe or spoon the meringue on top of the shandy.
- Use a kitchen torch or grill lighter to gently toast the top of the lemon meringue. Garnish with a lemon wheel. Cheers!
