S’mores Skillet Cookie

S’mores Skillet Cookie

All the gooey, toasty magic of a campfire s’more with no fire needed. This easy one-skillet dessert is packed with chocolate chips, graham crackers, and marshmallows, then baked to golden perfection. Best served warm with a scoop of vanilla ice cream on top!

Makes 1 8-inch skillet cookie

Ingredients  

  • 1/2 cup Vital Farms Salted Butter, room temperature
  • 1 tablespoon coconut oil, melted
  • 1/4 cup granulated sugar
  • 2/3 cup brown sugar
  • 1 Vital Farms Egg, room temperature
  • 1 tablespoon heavy cream, room temperature
  • 1 teaspoon vanilla extract
  • 1 2/3 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup dark chocolate chunks
  • 3 sheets graham crackers, lightly crumbled
  • 1/2 cup mini marshmallows
  • finishing salt, to garnish
  • vanilla ice cream, to serve

Instructions 

  • Preheat the oven to 350° F.
  • In a large bowl whisk together the flour , baking soda, baking powder , and salt. Set aside.
  • In a second large bowl add the butter, coconut oil, granulated sugar, and brown sugar. Use a handheld mixer to cream ingredients together for two minutes.
  • Then add the egg, vanilla, and heavy cream to the butter mixture. Mix with the handheld mixer until ingredients are combined.
  • Gradually add the dry ingredient mixture to the wet ingredients until everything is incorporated.
  • Gently fold in the chocolate chips, graham crackers, and half of the marshmallows.
  • Transfer the dough to an 8-inch greased skillet, making sure to smooth out evenly.
  • Add the remaining half of the marshmallows on top by gently pressing into the dough.
  • Bake for about 28 to 30 minutes, then add finishing salt once removed from the oven. Allow to cool for 15 minutes before serving. Best enjoyed with vanilla ice cream!
