Cranberry Pistachio Granola
This homemade granola is low effort with maximum buttery, toasty flavor making it the perfect sweet lil gift this holiday season. Make a batch, bag it up and share the love or keep it for yourself as a festive snack.
Ingredients
- 1/2 cup Vital Farms Unsalted Butter, melted
- 1/2 cup maple syrup
- 1/2 cup tahini
- 1 large orange, zested
- 1 teaspoon sea salt flakes
- 1 tablespoon vanilla extract
- 3 cups rolled oats
- 1 cup sliced raw almonds, unsalted
- 1 cup pistachios, roughly chopped
- 1 cup pepitas
- 1/2 cup coconut flakes
- 1/4 cup poppy seeds
- 1 cup dried cranberries
Instructions
- Preheat the oven to 325° F. Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the melted butter, maple syrup, tahini, orange zest, sea salt, and vanilla extract.
- In a large bowl, add the oats, almonds, pistachios, pepitas, coconut flakes, and poppy seeds.
- Add the wet ingredients to the dry ingredients and stir until everything is evenly coated and combined.
- Spread the mixture evenly onto the trays, and press down gently to make clusters. Bake for 15 minutes, then rotate the trays and gently stir to prevent any burning. Return the trays to the oven for another 15-20 minutes, or until golden brown.
- Once the granola is cooled on the trays, break into clusters and stir in the dried cranberries. Bag up into gift bags.
