Preheat the oven to 325° F. Line two baking sheets with parchment paper.
In a medium bowl, whisk together the melted butter, maple syrup, tahini, orange zest, sea salt, and vanilla extract.
In a large bowl, add the oats, almonds, pistachios, pepitas, coconut flakes, and poppy seeds.
Add the wet ingredients to the dry ingredients and stir until everything is evenly coated and combined.
Spread the mixture evenly onto the trays, and press down gently to make clusters. Bake for 15 minutes, then rotate the trays and gently stir to prevent any burning. Return the trays to the oven for another 15-20 minutes, or until golden brown.
Once the granola is cooled on the trays, break into clusters and stir in the dried cranberries. Bag up into gift bags.
