Savory Stuffing Waffles

If you have leftover stuffing and a waffle maker, you gotta give these a try. Griddled to cheesy, crispy, buttery perfection, they also happen to make the perfect base for a fried egg. Don't forget the side of bacon.

Makes 4 servings

Ingredients  

  • 4 cups leftover stuffing
  • 2 Vital Farms Eggs
  • 1/2 cup cheddar cheese, shredded
  • 2 tablespoons Vital Farms Unsalted Butter

To serve

  • 4 Vital Farms Eggs, fried
  • 4 pieces bacon, cooked
  • leftover gravy

Instructions 

  • Crack two eggs in a medium bowl and lightly whisk to break up the eggs. Crumble in the stuffing and add in the cheese. Stir to combine.
  • Preheat a waffle iron. Once hot, add 1/2 a tablespoon of the butter and spread it around with a rubber spatula or knife to melt. Add a 1/4 of the stuffing mixture to the waffle iron and spread it out a bit in an even layer then close the lid, pressing down so the mixture spreads evenly. Cook according to your waffle iron directions until both sides are crispy and golden-brown. Repeat with the remaining butter and stuffing mixture.
  • To serve, top with fried eggs, some bacon and a drizzle of gravy if you’d like.
