Crack two eggs in a medium bowl and lightly whisk to break up the eggs. Crumble in the stuffing and add in the cheese. Stir to combine.
Preheat a waffle iron. Once hot, add 1/2 a tablespoon of the butter and spread it around with a rubber spatula or knife to melt. Add a 1/4 of the stuffing mixture to the waffle iron and spread it out a bit in an even layer then close the lid, pressing down so the mixture spreads evenly. Cook according to your waffle iron directions until both sides are crispy and golden-brown. Repeat with the remaining butter and stuffing mixture.
To serve, top with fried eggs, some bacon and a drizzle of gravy if you’d like.
