Leftover Stuffing Egg-In-The-Hole
Try this new twist on the classic breakfast by swapping in a block of stuffing in place of regular old bread for a tasty spin!

Ingredients
- 1 bread slice sized block of leftover stuffing/dressing
- 1 tablespoon Vital Farms Unsalted Butter
- 1 Vital Farms Egg
- salt
- ground pepper
Instructions
- Place the block of stuffing on a cutting board or plate and use a 2 or 3-inch round cookie cutter or paring knife to cut the center out.
- Heat a skillet over medium heat. Add in the butter and let it melt.
- Add in the stuffing block and round cutout into the pan and crack the egg into the hole. Season the egg with salt and pepper. Griddle on one side until the egg has set and the bottom of the stuffing is golden-brown. Flip both pieces and continue cooking until the round is golden brown on the other side and the egg has set on the second side, another minute or so.
- Remove both and add to a plate. Use the round for dipping into the egg.
Thanksgiving Eggs Benedict
Whip up this festive breakfast quicker than it takes to make hollandaise with a few Thanksgiving leftovers and some perfectly poached eggs!

Ingredients
- leftover stuffing
- 1 tablespoon Vital Farms Unsalted Butter
- 2 Vital Farms Eggs
- salt and pepper
- leftover turkey or ham warmed
- leftover gravy warmed
Instructions
- Using a round cookie cutter or glass, cut out 2 rounds of stuffing about the size of an English muffin.
- Heat a skillet over medium heat. Add the butter and allow to melt then add in the stuffing rounds. Allow them to toast and get golden brown, about 2-3 minutes before flipping and repeating on the second side. Remove from the skillet and set aside.
- Heat a medium pot with water over medium-high. Crack egg into a small sieve with a bowl underneath and allow the albumen or the watery part of the egg white to strain out. You should be left with just the thicker white and the yolk. When water is just starting to simmer, turn heat down to medium and add the egg from the strainer. Simmer for 3 minutes before removing with a slotted spoon.
- To assemble: place the stuffing rounds on a plate and top each with a slice of ham or turkey. Place an egg on top of each, season lightly with salt and pepper, and top with a drizzle of gravy.

Savory Stuffing Waffles
If you have leftover stuffing and a waffle maker, you gotta give these a try. Griddled to cheesy, crispy, buttery perfection, they also happen to make the perfect base for a fried egg. Don't forget the side of bacon.

Ingredients
- 4 cups leftover stuffing
- 2 Vital Farms Eggs
- 1/2 cup cheddar cheese, shredded
- 2 tablespoons Vital Farms Unsalted Butter
To serve
- 4 Vital Farms Eggs, fried
- 4 pieces bacon, cooked
- leftover gravy
Instructions
- Crack two eggs in a medium bowl and lightly whisk to break up the eggs. Crumble in the stuffing and add in the cheese. Stir to combine.
- Preheat a waffle iron. Once hot, add 1/2 a tablespoon of the butter and spread it around with a rubber spatula or knife to melt. Add a 1/4 of the stuffing mixture to the waffle iron and spread it out a bit in an even layer then close the lid, pressing down so the mixture spreads evenly. Cook according to your waffle iron directions until both sides are crispy and golden-brown. Repeat with the remaining butter and stuffing mixture.
- To serve, top with fried eggs, some bacon and a drizzle of gravy if you’d like.
